1 (16 oz.) pkg. - dry pinto beans
1 small - smoked ham hock (about 8 oz.)
½ small - onion, chopped
1 (4 to 4.5 oz.) can - mild green chiles, chopped
2 tsp. - dried oregano
½ tsp. - salt
about 5½ c. - water

Directions:
Directions:
Rinse beans under cold running water and discard any stones or shrivelled beans. In a 4 qt. saucepan, combine beans, hock, onion, chiles with their liquid, oregano, and salt. Add water to come to 1 inch above beans. Heat to boiling over high heat. Reduce heat to low; cover and simmer 1½ hours stirring occasionally. Add another 1½ cups water to saucepan; cover and simmer 2 hours longer or until beans are tender and liquid has thickened, stirring occasionally and adding more water if necessary to prevent sticking. With slotted spoon, transfer ham hock to cutting board. Cut meat from hock and finely chop; discard bones and fat. Stir meat into beans to serve. Makes about 6 cups or 12 accompaniment servings.
