1 can pumpkin
1 cup white sugar
½ cup oil
1 large egg
1 teaspoon baking soda
1 teaspoon milk
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon
½ teaspoon salt
½ cup walnuts or pecans
1 tablespoon vanilla
2 cups semi-sweet chocolate chips (optional)

Directions:
Directions:
Preheat oven to 350 F. Grease baking sheet or cover with parchment paper. In a large bowl mix pumpkin, sugar, oil, vanilla, and egg. Dissolve baking soda into milk and then stir into pumpkin mixture. In a separate bowl stir together flour, baking powder, cinnamon, and salt. Add flour mixture to pumpkin mixture and mix well. Now fold in nuts and chocolate chips if using. Drop by spoonful to prepared baking sheet and bake for 10 minutes until firm. We found that the baking period was a little short.
