2 lbs. cod loins (cut into bite size pieces)
1 -2 lbs. sea bass (cut into bite size pieces
1 lg onion chopped
3 stalks celery hearts (stalks included)
2 cloves garlic
4 c. (approx) yukon gold potatoes
4 c. chicken broth
8 c. half and half (64 oz.)
4 T. butter
1/2 lb. bacon

Directions:
Directions:
Cook bacon in large pot and remove when done.
Sauté garlic, onion, and celery in bacon fat.
Add chopped bacon and potatoes.
Cover potatoes with chicken broth.
Bring to a boil and cook until potatoes are al dante. DO NOT DRAIN!
Add 8 cups of half and half. Once hot, add the fish.
Season with salt and pepper. I also add onion powder, garlic powder, ground coriander, and a 1/2 tsp. of nutmeg and parsley.
From this point on, gently stir so you don't break up the fish.
Add the butter and turn off. The fish will cook in the broth.
