1 pound bacon, cut into small pieces
1 medium onion, chopped
12 eggs, lightly beaten
32oz hash browns, thawed
2 cups shredded cheddar
1½ cups cottage cheese, small curd
1¼ cups shredded Swiss cheese

Directions:
Directions:
Preheat oven to 350º.
Brown bacon. Add onion and wilt.
In a large bowl combine eggs, hash browns, and all 3 cheeses. Stir in all of the bacon onion mixture and blend. Add to baking dish.
Bake uncovered for 40 to 45 minutes.
Let stand for 10 minutes and serve.
