1 cup softened butter
1½ cups sugar
1 tbsp Vanilla extract
4 cups all-purpose flour
1 tsp baking soda
1 tsp salt
3 large eggs

Directions:
Directions:
Beat butter in a large bowl at medium speed until fluffy. Gradually add sugar, beating well.
Add eggs, one at a time, beating after each one added.
Stir in vanilla.
Combine flour, salt, and baking soda and gradually add to butter mixture, beating until blended.
Cover and chill 1 hour.
Roll dough to 1/8 inch thickness on a well-floured surface.
Cut with 1/2 inch round cookie cutter and place on a lightly greased cookie sheet.
Bake at 350 degrees for 8 minutes or until edges are lightly browned.
Remove to a wire rack to cool.

Grandma Bonnie talked a lot about these cookies. She had to live in Gainesboro during the week with her grandparents to go to school because it was to far to walk from her parent's farm on Roaring River. Her Grandma Sadler would have them warm and waiting for her when she got out of school.
