3 lbs. calamari (squid)
1 lbs. ricotta
1 cup breadcrumbs
3 heaping tablespoons parmesan cheese
1 large onion chopped
garlic, basil, parsley to taste

1 large can crushed or pureed tomatoes
olive oil

Directions:
Directions:
Clean squid: cut below the eye level of the tentacles because the ink might spill or squirt. Cut tentacles into pieces. Under warm water, remove skin and back bones from body of squid being careful not to break the cuttle bone. Cut tentacles into large pieces. Place in pan, cover with water and simmer 5 minutes.
Make tomato sauce: Sauté onion in oil until soft. Add tomatoes, 1/2 of the cut tentacles and season. Simmer for 30 minutes.
Mix together ricotta, breadcrumbs, parmesan, 1/2 of the tentacles, chopped and add seasoning. Stuff squid leaving space at the top. Fasten with a toothpick.

Place squid in sauce, cover and simmer 30 minutes more.
