Ingredients: 2 c. Milk 3 c. water 3 package dry yeast (2 for 1/2 recipe) 1 1/4 c. sugar 6 tsp salt 4 eggs 1 1/4 vegetable oil 20 c. flour (approximate)

Directions:Dissolve yeast in warm water (not hot). Add sugar, stir until dissolved. Add salt Beat the eggs and add to yeast mixture. Scald milk (heat until bubbles form around the edge of the pot), remove from heat. Let cool 5 min, then add oil. Slowly add to the yeast mixture. Add 10c. flour into the yeast mixture and mix very well. Add approximately 8 more c. flour, by this time you will need to use your hands to mix. Turn out onto well floured board. Cover with a bowl and let rest for 10min. Knead for 10min so it is smooth and very elastic. (Keep adding enough flour that it doesn't stick to the board.) Let rise until doubled about 1.5 hours. (Grandma's instructions say to take a nap here.) Punch down and let rise for another hour. Shape into buns. 1oz buns are about the size of a golf ball, 2oz buns are the size of a stress ball. You can also shape into loaves. We make clover leaf buns for Thanksgiving by forming 3 small balls and putting them in muffin pans. Place on greased baking sheet and let rise until doubled about 1hour. Bake at 400º till golden brown. Check loaves after 28-30 minutes and buns after 17-20. |
