1 cup all purpose flour
½ tsp baking soda
½ tsp salt
½ tsp cinnamon
¾ cup butter, room temperature
⅓ cup brown sugar
⅓ cup sugar
1 egg
2 cups rolled oats (not instant)
Finely grated peel of 1 orange (optional)
1 tsp vanilla

1. Preheat oven to 325ºF
2. Lightly grease cookie sheets
3. Measure flour into a small bowl
4. Add baking soda, salt & cinnamon
5. Stir with a fork until all ingredients are evenly distributed
6. Measure butter into a large bowl
7. Stir with a wooden spoon or an electric mixer until creamy
8. Gradually stir in both sugars
9. Add egg, orange peel & vanilla
10. Beat vigorously until well mixed
11. Gradually stir in flour mixture, then oats
12. Spoon heaping tablespoons of dough onto cookie sheet, leaving about 2” between cookies
13. Bake in centre of oven until edges are golden, about 13-15 minutes
