½ cup shortening
¼ cup brown sugar
½ teaspoon salt
1 egg yolk
1 1-ounce square unsweetened chocolate, melted
1 cup sifted enriched flour

1 slightly beaten egg white
1 cup broken walnuts or pecans

⅓ cup cherry preserves

Directions:
Directions:
Cream together shortening, sugar, salt and egg yolk till light and fluffy. Blend in chocolate. Stir in flour. Chill ½ hour. Shape in 1-inch balls; dip in egg white and roll in nuts.

Place 2½ inches apart on a greased cookie sheet; press centers with thumb.

Bake in moderate 350º oven 8 minutes. Remove from oven; press centers again.

Bake 8 minutes longer or till done.

Cool slightly; remove from pan.

Just before serving, fill centers with preserves.
