1/3 c. finely chopped onion
1/3 c. finely chopped celery
2 T. finely chopped red sweet pepper
1 T. butter
3 T. flour
1 T. finely chopped lemon grass or 1 tsp shredded lemon peel
1/4 t. ground red pepper
1- 14 1/2 oz can chicken broth
1-13 1/2 oz coconut milk
1/2 c. smooth peanut butter
1 T. soy sauce
chicken (optional)
TOPPINGS:
chopped peanuts
snipped cilantro
red pepper strips

Directions:
Directions:
Saute onion, celery and sweet pepper.
Stir in flour, lemon grass, ground red pepper.
Add chicken broth & coconut milk (can puree here if you want to)
Add chicken if you want.
Cook and stir till mixture is slightly thickened & bubbly.
Add peanut butter and soy sauce. Stir until well blended and heated. Add toppings if desired.
