Gram's Baked Squash Recipe

Ingredients:  
2 tbsp. butter, divided
2 lbs. squash, sliced into quarter size discs
1 onion, chopped
1 bell pepper, chopped
2 eggs, beaten
1 cup cheddar cheese
1/4 cup sour cream
1/4 mayo
3/4 cup crushed crackers (Ritz recommended)
1 clove garlic, diced
salt & pepper to taste

Directions:
Directions:
1. Preheat oven to 350º F.
2. In saute/fry pan, cook squash, onions & peppers in 1 tbsp. butter until tender.
3. Mix eggs, cheese, sour cream, mayo, garlic, salt & pepper.
4. Combine all above ingredients.
5. Pour into 9x13 baking pan.
6. Bake 30-35 minutes.
7. Mix crushed crackers & 1 tbsp. melted butter.
8. Sprinkle over top of baking pan.
9. Continue baking until golden brown.
