5 lbs. potatoes, peeled and grated
1/2 cup white onion, grated
1/4 cup milk
3 eggs, beaten
1 and 1/2 cups all-purpose flour
1 tsp. Salt
Canola oil for frying

Directions:
Directions:
In a large bowl, combine potatoes, onions, milk, and eggs. Stir until blended.

Add flour and salt; stir until a batter forms and set aside.

And a large skillet generously coat the bottom of the pan with oil; heat over medium high heat.

For each pancake add several teaspoonfuls of batter to pan: cook on each side until lightly golden; remove to a paper towel- lined plate

Serve warm plain or garnished as desired

Note: Great with butter, apple butter, or sour cream and chives.
