6 oz salt pork or bacon, diced
2 lbs sauerkraut
2 large onions, diced
2 ham hocks or a link of kielbasa
2-3 T caraway seeds
2 T brown sugar

2 T olive oil

¼ cup water
2 T Flour (divided)
Salt and pepper

Directions:
Directions:
Cook the salt pork or bacon on medium heat in olive oil in dutch oven or large pot. Remove meat with slotted spoon and reserve.

Add onions and cook until soft but not brown. Add 1 T flour and make a roux. Add meat, sauerkraut and caraway seeds.

Add water to top of sauerkraut mixture. Cook on low heat, covered for 2 hours.

30 mins before serving add remaining flour and sugar.

Slow cooker:
Cook the bacon and onion on the stovetop and then add to your crockpot with the rest of the ingredients.
Cook on low for 6 hours.
