COOKIE:
1½ c. flour
¼ t. baking soda
¼ t. salt
½ c. butter
1 c, brown sugar
1 egg
½ t. vanilla extract
1 c. cocktail or Spanish peanuts

FROSTING:
⅓ c. milk
1 sq. unsweetened chocolate
1 c. powered sugar
¾ t. vanilla extract
¼ c. peanut butter

Preheat oven to 350º

COOKIE:
Stir together flour, soda, and salt. Set aside.
With a standing mixer bowl, cream butter and brown sugar on high speed for 4-5 minutes.
Add beat in egg and vanilla.
Gradually mix in dry ingredients until it is all blended. Cover and chill.

Grease a baking sheet with butter or shortening.
Shape dough into balls using about 1 T. of dough for each.
Press each ball onto a teaspoon of peanuts on a greased baking sheet.

Bake 10-12 min. Let cookies cool before frosting

FROSTING:
Melt chocolate with milk over low heat.
Stir in sugar and vanilla. Heat to boiling.
Blend in peanut butter.
Keep frosting warm over hot water while frosting the cookies.
