FIESTA FINGERS:
1 c. - mayonnaise
1 T. - Cajun spice mix
2 lb. - chicken breasts, boneless, skinless, & cut into finger size pieces
4 c. - bite size tortilla chips, finely crushed

TOUCHDOWN SAUCE:
½ (8 oz.) jar - salsa
1 (8 oz.) carton - sour cream
chopped leaves from one bunch of cilantro

FIESTA FINGERS: Preheat oven to 350°. Combine mayonnaise and Cajun spice mix and spread on both sides of chicken fingers. Dredge chicken fingers in crushed tortilla chips. Place coated fingers on a lightly greased baking sheet. Bake at 350° for 25 to 30 minutes, or until completely cooked. Serve with Touchdown Sauce.

TOUCHDOWN SAUCE: Combine salsa, sour cream, and chopped cilantro leaves.
