1 cup shortening (or butter)
2 cups brown sugar
2 eggs
1 tsp vanilla
¼ cup boiling water
2 cups flour
½ tsp salt
1 tsp baking soda
2 cups oatmeal
Optional: raisins, chocolate chips, and/or nuts to taste

Directions:
Directions:
1.Preheat oven to 375°F (190°C).
2.In a large bowl, cream together shortening (or butter) and brown sugar until smooth.
3.Add vanilla, salt, and eggs, mixing well.
4.Dissolve baking soda in boiling water and stir into the mixture.
5.Add the remaining ingredients (flour, oatmeal, and optional add-ins) and mix until combined.
6.Scoop dough onto cookie sheets, leaving room for spreading.
7.Bake for 10–12 minutes, until lightly golden.
8.Cool on the cookie sheet for a few minutes, then transfer to a wire rack to cool completely.
