1 cup butter
½ cup sugar
½ cup brown sugar
1 egg
3 Tbsp milk
1 tsp vanilla
3–3½ cups flour
½ tsp salt
½ tsp baking soda
Date Filling:
2 cups chopped dates
½ cup sugar
½ cup water
2 tsp lemon juice
¼ tsp salt

Prepare the Dough:
1.Cream together butter, sugar, and brown sugar until light and fluffy.
2.Add egg, milk, and vanilla; mix well.
3.Sift in flour, salt, and baking soda and mix until dough forms.
4.Cover with plastic wrap and refrigerate for about 1 hour.
Prepare the Filling:
1.In a small saucepan, combine dates, sugar, and water.
2.Bring to a boil, then cover and simmer for 5 minutes, stirring occasionally.
3.Stir in lemon juice and salt and let the mixture cool.
Assemble and Bake:
1.Roll out the dough on a lightly floured surface.
2.Using a circle cookie cutter, cut dough into circles.
3.Place a spoonful of date filling in the center of each circle and fold over, sealing edges well. (A pierogi press works great for this.)
4.Arrange cookies on an ungreased cookie sheet.
5.Bake at 375°F for 10–12 minutes, until lightly golden.
Let cool slightly before serving.
