1 1/2 cups flour
2/3 cups sugar
2 tsp vanilla
1 T baking powder
1/4 tsp salt
1 egg
1/3 Cup unsalted butter (room temp)
1/2 Cup Ricotta (drained)
Zest of 1 lemon
Powdered sugar

Directions:
Directions:
In a bowl mix sugar, butter, eggs, ricotta, & lemon zest together. In a separate bowl mix flour, baking powder, & vanilla then mix all together, mix until fluffy. Using a small scooper put dough on a cookie sheet lined with parchment paper 2-3 inches apart.
Bake 350º 13-15 minutes until cookies are golden brown-Cool Cookies.
For frosting: Mix powdered sugar with juice of one lemon, or water, milk. Drizzle on cookies and let dry on a wire rack.
