1 Cup butter or margarine
2 Cups sugar
3 eggs
4 Cups flour
1 tsp baking soda
1 # Ricotta (drained)
Pinch of Salt
1 tsp lemon extract

Frosting:
2 Cups powdered sugar
1 tsp lemon extract
Milk

Directions:
Directions:
Cream butter, sugar and beaten eggs, you can add the lemon now. Next add sifted 1/2 of flour and baking soda, lastly add ricotta cheese and the rest of the flour. Mix well.
Place dough on cookie sheets 1 tsp at a time for each cookie.
Bake 350º 10-12 minutes

Frosting:
2 Cups powdered sugar
1 tsp lemon extract
Add little milk & blend well.

Frost cookies when they are cool.
