1 c. sugar
2 eggs, separated
1 c. milk
5 Tbsp. flour
¼ tsp. salt
⅓ tsp. baking powder
1½ tsp grated lemon rind
Juice of 1 lemon (2½-3 Tbsp.)
1 Tbsp. melted butter

Directions:
Directions:
Combine sugar, flour, baking powder and salt. In a separate bowl beat egg yolks and milk. Mix all together thoroughly. Add butter, lemon juice and rind. Blend well. Beat egg whites until stiff and fold in at the last.
Pour into a 7 x 11 in. greased casserole dish. Set the dish in a pan of hot water. Bake at 325º for 25-35 minutes.

When I visited a couple in New Zealand she served this pudding using fresh lemons from her garden. Delicious! I concluded that the recipe had to have originated in the UK since both Canada and New Zealand have direct ties to those countries. I have always loved this pudding - light with a gentle citrus taste.
