1 uncooked pie shell
2 c. cooked pumpkin
½ c. brown sugar
2 well-beaten eggs
1½ c. milk
½ tsp. ginger
½ tsp. cinnamon
⅛ tsp. nutmeg
½ tsp. salt

Directions:
If you are using freshly cooked pumpkin and want it smooth, use your food processor or blender to get the desired result. Otherwise the potato masher will do. Mix all the other ingredients with the pumpkin and pour into the pie shell. Bake at 400º for 10 minutes; reduce the heat to 325º and continue baking until custard is set - about 40 minutes. Cover with whipped cream.

Mom brought this recipe from Saint John when she worked at the Protestant Orphan's Home. When the recipe was written in the 1930s canned pumpkin did not exist! Neither Mom nor I have ever used it either because it differs in consistency but you can use the canned type without spices if you wish. You can adjust the spices in the recipe to your liking too. Mom always disliked cloves so never used them, nor did she use allspice or pumpkin spice. My children prefer this pie with the pumpkin just mashed with some small lumpy pieces in it -- me too! It's probably an acquired taste from before blender or food processor days.
