Granny's Gingerbread Recipe

½ c. shortening
½ c. sugar
1 egg
1 c. molasses
2½ c. flour
1 tsp. salt
1½ tsp. soda
½ tsp. cinnamon
1¼ tsp. ginger
1 c. hot water

Directions:
Directions:
Cream shortening and sugar. Add the egg and molasses. Combine the 5 dry ingredients and add, blending thoroughly. Stir in the hot water making a smooth batter. Bake in a greased 7 x 11 in. pan at 350º for 40 - 45 minutes.

When I was a child, this was referred to as molasses cake. I never liked it much. Today it has been glorified as gingerbread and is most often topped with a large dollop of sweet whipped cream. Had my mother served that in the 1940s I might have been happier with my dessert.
