1 head Dill or 1 T. Dill seed
1 T. Pickling spice
1 T.salt
1 clove of garlic or 1 1/2 tsp chopped garlic
1-2 slices of chopped onion
Pinch of Alum
1/2 or 1 whole hot pepper of your choice
1 or 1/14 cup vinegar,
3 cups water
Watermelon rinds cut into chunks

Peel the skin and half of the white from the watermelon rind. Leave a good half-inch red on the pieces. Cut the melon into chunks. Fill the jars with the above ingredients. Process for 5 minutes. That means don't start counting until water comes to a boil. (Processing is submerging the jars with the lids on in boiling water to seal.

Also, when I say a pinch of alum, I am serious, no more. You can buy pickled garlic in itty bitty pieces (that's what I use because it beats peeling garlic). This is also my regular pickle recipe.
