2 cups sugar
1 ¼ cups vegetable oil
4 eggs
2 cups flour
1 tsp cinnamon / tsp nutmeg
1 tsp salt
2 tsp baking soda
3 cups grated carrot
1 cup pecans
1 cup raisins
1 cup crushed pineapple, drained

Cheese Icing
1 8 oz package cream cheese
½ cup butter
1 1-pound box confectioners' sugar
1 tsp vanilla

Directions:
Directions:
Cream sugar and oil. Add eggs, one at a time. Add flour, spices, salt and baking soda, mixing well. Add grated carrot, pecans, raisins, and pineapple.
Pour into a greased and floured 13x9 inch pan and bake in a 375 degrees oven 50 to 60 minutes. Cool and frost with Cheese Icing.

Cream Cheese Frosting
Cream cheese and butter. Gradually add sugar, beating until fluffy and of spreading consistency. Stir in vanilla.
