1 cup flour
1 tsp baking powder
1/4 tsp salt
1 cup water
3 eggs
½ cup butter

Directions:
Directions:
Preheat oven to 425 degrees. Butter cookie sheets. Sift flour, baking powder, and salt. Bring water and butter just to boiling point. Remove from heat and mix in flour mixture all at once. Replace on low heat and beat hard with wooden spoon until mixture leaves sides of pot. Remove from heat and beat in the eggs one at a time, beating after adding each egg. Drop by spoonfuls about the size of an egg, well apart. Bake at 425 degrees for 15 minutes, then turn oven down to 375 degrees and bake 25 minutes longer. Turn oven heat off and leave oven door open, allowing puffs to dry for 10 minutes.
