3 cups potatoes
3 TBS bacon fat
1 cup chopped onions
1 tsp paprika
1 tsp salt
½ tsp pepper
1 ¼ cups thick sour cream
1 TBS chopped parsley

Directions:
Directions:
Peel and cut potatoes into small cubes, and cook until half-done. Do not overcook potatoes and set aside. In a large skillet add bacon fat, (10-inch skillet and chopped onions and fry until golden brown, stir occasionally. To the onion mixture, add paprika, salt, and pepper. Remove skillet when done, and add the sour cream to onion mixture, also add potatoes and mix slowly but thoroughly. Cover skillet with tight fitting cover. Place skillet back on the stove and cook very low heat for 30 minutes. Do not boil. Turn potatoes over occasionally in sauce. When cooked remove from heat and garnish with chopped parsley. Or if you wish, shred one large carrot and sprinkle over potatoes. Looks great!
