30 jumbo pasta shells
6 TBS butter
6 TBS flour
4 cups milk
¼ cup finely chopped parsley
Salt and white pepper to taste
½ pound cooked shrimp
2 cups small curd cottage cheese or ricotta cheese
1 ½ cups grated cheddar cheese
1 ½ cups grated mozzarella cheese
2 eggs, beaten
½ tsp salt

Cook jumbo shells as package directs. Melt butter in saucepan over medium heat. Blend in flour. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute. Remove from heat. Stir in parsley, salt and pepper to taste. Set sauce aside. In large bowl combine remaining ingredients. Fill cooked jumbo shells with seafood mixture. Spread about 1 ½ cups of white sauce in bottom of 13x9x2-inch pan. Arrange single layer of stuffed shells and pour over remaining sauce. Bake in 375 degrees oven for 20 minutes, or until sauce bubbles.
