6-8 yellow squash (+/-)
2 eggs
1½ cups french fried onions (+/-)
4 ounces butter (1 stick)
1⁄4 cup sugar +/-
2 teaspoons salt
2 tablespoons finely chopped onions
1 dash pepper


Directions:
Directions:
Cut the ends off the squash and cut in 3-4 pieces. Boil in water till tender (just a few minutes). Drain and coarsely mash, (i.e. leave chunky) Add remaining ingredients. Mix in ½ cup of the french fried onions. Place in casserole dish and
cover with a light layer of remaining french fried onions. Bake at 350º till lightly browned, about 10-15 minutes.

Measure out how much squash you’ll need by laying it out in the dish that you’ll be using. You can use breadcrumbs instead of french fried onions if you prefer.
