1 cup rolled oats
6 ounces pitted dates (about 1 cup)
1/2 teaspoon vanilla bean powder

fruit-sweetened jam of your choice (see recipe below for making your own chia jam)


Chia Jam:
1 pound fresh or frozen and thawed berries (any kind)
1/4 cup chia seeds

Place fruit in a blender or food processor fitted with the S blade and process until smooth. Pour into a bowl and stir in the chia seeds. Place into the refrigerator and it will thicken as it chills.

Preheat oven to 350 degrees.

Place oats and vanilla bean powder in a food processor fitted with the S blade and process into a flour-like consistency. Add dates and process until a ball forms (around 1 minute), adding a few more dates if necessary.

Divide the mixture into 4 pieces, roll into balls and flatten with your hand. Using your fingertips, build up the sides of each cookie so you will have an indentation to hold the jam. Fill each cookie with the jam.

Bake for 5 minutes on a baking sheet lined with parchment paper or a non-stick silicone baking mat. Let cool completely.


*NOTES
If making a double batch, make each batch of the cookie dough separately in the food processor. I tried doubling the recipe and processing the dough at the same time and it was too hard on the food processor. The food processor was literally jumping up off the counter.
