Ingredients:  
Pancake mix:
4 c flour
8 tsp baking powder
1 Tbsp baking soda
2 Tbsp sugar
½ Tbsp salt
1½ c commercial pancake mix

Pancakes for 3-4:
2 eggs
2 Tbsp fat (oil, bacon grease, etc.)
2 c buttermilk (or 2 c milk, replacing 2 Tbsp with lemon juice or vinegar)
¼ c water
2 c pancake mix

Directions:
Directions:
Sift dry ingredients together several times, store in an airtight container.

When making pancakes, mix together wet ingredients and add to 2 c pancake mix. Pour onto hot griddle.

These were a favorite treat every time we visited my grandparents in Hibbing, MN. My Aunt Sally gave me the recipe shortly after Mike & I got married. Sally passed away a little over a year ago, and a recipe in her handwriting, on a scrap piece of paper, has become a treasured keepsake.
