½ cup unsalted butter, softened
1 cup dark brown sugar
3 tbsp. granulated sugar
1 large egg
2 tsp. vanilla extract
1 ¾ cups all-purpose flour
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 tsp. instant espresso
1 ½ cups semi-sweet chocolate chips
Fancy Sea Salt Flakes for sprinkling onto the cookies prior to baking

Preheat the oven to 300º Mix butter, brown sugar & granulated sugar in a large bowl until smooth. Mix in the egg and vanilla until combined. In a mixing bowl, sift together the flour, baking powder, baking soda, and salt. Add the flour mixture to the bowl to combine. Stir in the espresso powder and chocolate chips until well-combined.
Line your cookie sheet with parchment paper. Scoop a heaping Tbsp. of the cookie dough onto the sheet in dollops, 3 inches apart as they will spread. These cookies will be big so about 9 will fit on a standard cookie sheet. Gently press the cookie dough down with the back of the spoon, and sprinkle a pinch of fancy sea salt flakes on top of each cookie. Transfer to the oven in batches, and bake for about 25-30 minutes, or until the cookies are slightly browned around the edges. Baking closer to 30 minutes will yield a crisper cookie.
