2 cups packed brown sugar
1 cup creamy peanut butter
2 sticks of salted butter, softened
2 eggs
2 tsp vanilla
2 cups uncooked old-fashioned rolled oats
2 cups all purpose flour
½ cup whole wheat flour
1 tsp baking soda
½ tsp baking powder
1 cups raisins
10 ounces semi-sweet chocolate chips

Directions:

Heat oven to 350ºF.

1. Add the flours, baking soda and baking powder in a bowl and mix thoroughly; set aside.

2. In a large mixing bowl, mix the sugar and softened butter until pale and creamy. Add the peanut butter and continue to mix. Add eggs, one at a time, and then the vanilla, and continue to mix until well blended. Scrape the bowl and mix for an additional minute.

3. Add the flour mixture from the first step into the bowl with the butter / sugar mixture and stir together by hand with a spoon until just combined. Then add the oats, raisins and chocolate chips and mix by hand until thoroughly combined.

4. Drop cookie dough by heaping tablespoons 2 inches apart onto ungreased cookie sheets. Bake in the oven for 10-14 minutes (depending on the cookie sheet type) until golden brown. After removing from the oven, let cookies cool for several minutes before removing from the cookie sheet. Cool completely on a rack before storing.

Note: Cookies can be frozen and then removed from the freezer for several hours before serving.
