Filling:

1/2 c sugar
1/4 tsp cinnamon
1/2 c raisins
1 1/2 tsp cornstarch
1 c chopped dates
1/2 c water

Cook and stir til thick then cool.

Dough:

1 c butter
3 eggs
4 c flour
2 c sugar
1 tsp vanilla
1/2 tsp salt

Directions:
Directions:
Mix dough well-cover and refrigerate til very cool.
Then roll out half of the dough about 1/8 inch thick-cut with a 2 inch round cookie cutter.
Place 1 inch apart on uncreased cookie sheet-place about 1 tsp filling in center of each.
Roll the rest of dough-cut with 2 inch cutter and place over first (I cut a hole in center) press edges together.
Bake at 400º for about 10-12 minutes.

These cookies were only and always made at Christmas time.

You may substitute all raisins for the dates.
