Ingredients:
Ingredients:
4 c. wild Blueberries (fresh or frozen)
1 c. sugar
1 1/3 c. water
3 tbs. cornstarch
1 tbs. lemon juice
1 double pie crust (see recipe under dessert section)

Directions:
Directions:
Place 1 c. of blueberries, 1 c. water, 1 c. sugar and lemon juice in saucepan and cook slowly on medium to low heat for 15 minutes, until berries are cooked and softened. Add 1/3c. water to the cornstarch to make a smooth paste. Add this to the blueberry mixture and cook, stirring constantly, for about 15 more minutes, until thickened and the sauce is clear. Cool and add the remaining 3 c. f blueberries, stirring well. Now, preheat oven to 425 degrees. Pour into an unbaked pie crust and cover with the second pie crust. Make 3 slits in the top crust for steam. Place the pie in the oven and baked at 425 degrees for 15 minutes, then reduce oven temp to 350 degrees for another 40 minutes. Placing a piece of foil on the rack underneath to catch any drips, helps keep the oven clean. If the crust is browning too fast, place a piece of foil over top.
