2 cups All-Purpose Flour
1 tsp. Baking Soda
1/4 tsp. Salt
3/4 cup Quick Oats
3/4 cup Dark Brown Sugar, packed
3/4 cup White Sugar
1 cup Salted Butter, softened
2 large Eggs
2 tsp. pure Vanilla Extract
1 cup chopped Pecans (4 oz.)
1 cup Semi-Sweet Chocolate Chips (6 oz.)

Directions:

Preheat oven to 300 degrees.

In a medium bowl, combine flour, soda, salt, and oats. Mix well with wire whisk and set aside.

In a large bowl, blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste. Scrape down side of bowl, then add eggs and vanilla. Beat at medium speed until fully combined.

Add the flour mixture, pecans, and chocolate chips; blend at low speed just until combined. Do not overmix.

Drop dough by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart. Bake for 18 to 20 minutes. Immediately transfer cookies with a spatula to a cool, flat surface. Yield: 3 dozen.

Note: I bake for 18 minutes and my yield is 4 dozen or more as I use heaped teaspoon.
