2/3 cup cornmeal (I get Adams or Simmons for Opp)
1/3 self-rising flour
1/3 cup buttermilk
salt to taste

Directions:
Directions:
Mix all together. Put oil in a skillet and turn on medium heat. Scoop out spoonful of mixture and flatten between hands and place in heated oil. Brown on both sides enough that cornmeal is cooked. Place on paper towel lined dish to cool

These are actually good when sprinkled with confectioner sugar when warm.
