2 loaves French Bread for a whole turkey (soften with water or juices of ingredients)
1/2 to 3/4 bunch of curly or flat leaf parsley (check for color)
1 cup Parmesan cheese fresh grated - to taste
1 or 2 Eggs - depending on the moisture of the bread
1 large onion - finely chopped or pureed
1-2 tablespoons or 2-3 whole cloves garlic - crushed
salt and pepper
olive oil - 1-2 tablespoon
1-2 Tablespoons Italian seasoning - or taste

In blender add leafy parts of parsley and discard stems, onion, garlic an water to cover onion. Add more water if needed to do the job in the blender.

Break apart bread and put in large bowl, pour blended mixture over bread and mix with your hands. Add parmesan cheese, egg(s), olive oil, salt, pepper, and Italian seasoning and mix with your hands more until mixed well. If the mixture appears too dry add water to desired consistency.

Nana's way:
Submerge bread in water to moisten, then squeeze, put in large bowel, add other ingredients
and mash together with hands. (the old way)

I make the day before and put in fridge to let the bread soak up the juices.

This is all trial and error to taste..

Stuff it in the turkey cavities, close up the cavities and roast in the oven until the turkey is done :)

This has been handed down from generation to generation! Stuffing comes out green because of the parsley. It's a family tradition! It may look weird to the outsider but once they try it, they love it!

NOTE: Really good the day after on a sandwich on sourdough bread with turkey, mayo and cranberry sauce!
