Cookie dough:
1 c shortening
2 c brown sugar
1/2 c sugar
3 eggs
3 3/4-4 c flour
1 t salt
1 t baking soda
1 t cinnamon

Filling:
1 1/2 c chopped dates
1 c sugar
1 c water
1/2 c chopped pecans

Directions:
Directions:
Cookies:
Cream shortening and sugars, add eggs and beat until fluffy.
Sift flour, add salt, soda and spices and add dry ingredients, beat until smooth
Chill dough several hours.
Filling:
Combine dates, sugar and water and cook until thickened then add nuts and cool
Roll out half the dough (~1/3" thick) and spread cooled filling over dough
Roll up like a jelly roll, chill well and then cut ~1/4" thick and place one inch apart on greased cookie sheets
Bake 375º until golden brown. Makes 3 1/2 dozen

We always made these around Christmas time. It seems kind of like an old recipe but it is delicious. The dates can be purchased already chopped which is perfect and usually the bag is exactly the amount you need! This recipe comes out of an older Mennonite cookbook.
