1/2 c. butter
1 1/2 c. semi-sweet chocolate chips, divided
1 T. instant coffee crystals
3/4 c. sugar
3/4 c. brown sugar, packed
2 eggs
2 t. vanilla
2 c. flour
1/3 c. unsweetened cocoa powder
1/2 t. baking powder
1/4 t. salt

Directions:
In a large saucepan, melt butter and 1/2 c. chocolate chips over low heat. Remove from heat and stir in coffee crystals. Cool for 5 minutes. Stir in sugars, eggs and vanilla. In another mixing bowl, combine flour, cocoa, baking powder and salt. Stir into coffee mixture. Stir in the remaining 1 c. chocolate chips (hard to stir). Drop by tablespoonsful on greased sheets. Bake at 350º for 10 minutes. Do NOT overbake - gets very dried out.
