1 cup butter (softened)
1/2 cup confectionary sugar
2 tsp Rodelle vanilla bean paste
2 cups flour

Combine all ingredients with a mixer. Add more vanilla if you want it stronger. .

On wax paper or parchment paper, spread out the dough in a log formation so it can be rolled into log that will later be sliced into round cookies.

Roll the way paper to create a cookie log, Seal the end of wax paper so the dough does not get hard. Put in the frig for at least 1 hour.

When ready to bake, heat an oven to 350 degrees. Slice the cookie dough to your desired thickness( 1/2 inch is best) and cook on a cookie sheet. If you want to add sprinkles this is the time before they go in the oven.

Bake for 10 minutes or when the cookies appear brown but not over cooked. They will harden up if over cooked.

After cooking and when cooled, if you did not use sprinkles-, melt a little white or milk chocolate and spread on top of the cookies. Add sprinkles on top of the chocolate if desired.
