• 1 cup pitted Medjool dates (about 5.3 oz)
• ⅓ cup shredded coconut (about 1 oz)
• ¼ cup dark chocolate, melted (I used 70%)
• Pinch of salt

1. In a food processor, add the cashews, dates, shredded coconut, and salt.
2. Blend for a few minutes until the mixture comes together and is no longer crumbly. It should hold its shape when pressed between your fingers.
3. Divide the dough into 18 small portions and shape them into cookies. Use your thumb to press a small indentation in the center for the chocolate.
4. Place the bites on a baking sheet lined with parchment paper.
5. Freeze for 20–30 minutes until firm.
6. Remove from the freezer and drizzle or fill the center with melted chocolate.
7. Return to the freezer for 5–10 minutes until the chocolate hardens.
8. Enjoy! Store leftovers in the fridge or freezer.
