1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
1 C salted dry-roasted peanuts
16 Tbs butter, softened
1 C light brown sugar
1 C sugar
1 C extra-crunchy peanut butter
2 tsp vanilla
2 eggs

Preheat oven to 350º.

Whisk flour, salt, baking powder, and baking soda together in bowl. Pulse peanuts in food processor to fine crumbs, about 14 pulses.

Using stand mixer, beat butter, brown sugar, and granulated sugar on medium speed until pale and fluffy, about 3 minutes. Add peanut butter and beat about 30 seconds. Add vanilla, then eggs, one at a time. Reduce speed to low and slowly add flour mixture until combined, about 30 seconds. Mix in ground peanuts.

Working with 3 tablespoons at a time, roll into balls. Place them 2 inches apart on baking sheets. Using fork, make crosshatch design on cookies.

Bake 10-12 minutes until edges are golden and centers have puffed but are beginning to deflate. Cool 10 minutes on wire rack.
