1/2 teaspoon salt

3/4 cup unsalted butter, softened

1 cup packed brown sugar (light or dark)

1 large egg

1 teaspoon vanilla extract

1/4 cup granulated sugar (for rolling)

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.

Whisk together flour, baking soda, and salt in a medium bowl. Set aside.

Beat softened butter and brown sugar in a large bowl with an electric mixer until light and fluffy (2-3 minutes).

Mix in egg and vanilla extract until well incorporated.

Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Avoid overmixing.

Scoop tablespoon-sized portions of dough, roll into balls, and coat with granulated sugar.

Place dough balls on the prepared sheet, spaced 2 inches apart. Bake for 8-10 minutes, until edges are golden and centers appear slightly underdone.

Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
