Ingredients:  
2 cups flour
1 cup sugar
¼ tsp salt
1 tbs baking powder
3 eggs
½ cup shortening
1 tsp vanilla
1 tsp lemon extract
1 cup milk
2 cups fresh strawberries, sliced.

Glaze
2 cups sugar
2 cups water
1 tbs butter
¼ tsp salt
1 tsp vanilla
2 tbs cornstarch mixed in water (about 4 tbs)
Red food coloring

Directions:
Directions:
Cake: Preheat oven to 350º. Mix shortening, eggs, sugar, vanilla and lemon extract. Beat well and add dry ingredients. Pour in rectangular pan and bake for 30 minutes or until done. Let cool some and cover with strawberries. Pour glaze, after cooling, over cake.
Glaze: Mix water, butter, salt, vanilla and cornstarch together. Cook until thick, add sugar and red food coloring. Let cool.

You can use a store bought cake mix, I use yellow, French vanilla or white. Just bake as directed on box.
This recipe was passed down over the years by Grandma Hubbard. Grandpa Hubbard used to call it Strawberry Long Cake because Grandma made it in a long Corning ware dish. It’s not only delicious but, beautiful as well.
