Ingredients: CHICKEN: 4 whole chicken breasts 1/2 c soy sauce 2 stalks celery 1 ½ teaspoons sugar 1/2 cup sherry 2 garlic cloves
SALAD: 1 bunch broccoli, chopped 1/2 cup celery chopped 1/2 cup scallions chopped 1/2 c unsalted cashews, chopped rough
DRESSING: 3/4 cup mayo 1 teaspoon sugar (i omit) 1 teaspoon fresh lemon juice 1/2 teaspoon soy sauce 2 Tablespoons cooking liquid

Directions:Remove skin from chicken Combine all above chicken ingredients in a pan, add chicken breasts Simmer until tender, remove chicken and cool (SAVE LIQUID) once cool, cube chicken and return to cooking liquid and let sit until completely cool
Steam broccoli until just tender/crispy and bright green; cool
Mix dressing ingredients
Drain chicken from cooking liquid, add to bowl with broccoli Toss together with celery, scallions and nuts Add dressing and mix well
Refrigerate really well before service

Notes: This is a weird salad, I admit! I first had this when G&G lived by the pond with the pool....remember that place?
IT WAS SO GOOD! It is a little fussy but this chicken salad is good enough for a lunch party, it is that good.
please try it sometime.
