1¼ cup flour
1 tsp. baking soda
¼ tsp. salt
1 stick butter, softened
½ cup light brown sugar, packed
½ cup granulated sugar
½ cup creamy peanut butter
1 egg
10 whole mini chocolate peanut butter cups, finely chopped

Preheat oven to 375º.
In a medium-sized bowl, sift together the flour, baking soda and salt. Set aside. In a mixing bowl, beat the butter until creamy. Add in the sugars and continue to mix for 2 minutes. Mix in the peanut butter and egg. Add the flour mixture into the butter mixture and stir together with a wooden spoon. Fold in the chopped mini chocolate peanut butter cups. Shape cookie dough into 1½ inch balls and place them 2 inches apart on an ungreased cookie sheet. Flatten each cookie in a crisscross pattern with a fork. Bake for 8 to 10 minutes, or until edges are light brown. Cool on baking sheets for 2 minutes; transfer to a rack to cool completely.
