5-6 cups white rice cooked and cooled
3 carrots chopped like matchsticks or buy them precut
½ white onion chopped
2 stalks celery sliced thinly
2 tablespoons, Mom used fresh
3 eggs
6-8 strips bacon, slice into strips
1 chicken breast cut into small cubes
Murin for chicken
salt and pepper

Cook the rice and let it cool by placing in a colander. Mom used to fan the rice with a paper plate to cool. In a large skillet cook the bacon until crisp. Remove and drain on paper towel. Reserve about 2 tablespoons of bacon grease in the pan. Slice the carrots thin about matchstick size. They now sell carrots pre-cut this way. Dice the onions and slice the celery thin. Add carrots, celery and onion to the bacon grease and cook until tender. Remove the vegetables and add the diced chicken and a splash of murin to the pan. You can add more bacon grease if needed. Cook the chicken until done. Mix the 3 eggs with about 1 tablespoon of water. Heat a small skillet and add a dab of butter. Pour a thin layer of the eggs into the pan. When the egg has cooked, flip. Remove the egg and store on a paper plate. Continue until all the egg is cooked. Cool the eggs and roll into 3rds. Cut into thin strips. Add the cooled rice to the first skillet along with the vegetables, chicken and bacon. Toss gently until combined. Add parsley, salt and pepper to taste. Lastly gently fold in the egg. Heat on low for about 5 minutes.

This is a time consuming dish, but well worth the effort. You can add shrimp or ham along with the chicken. This was one of my Mom's most well known dishes. Everyone remembers Aunt Sue's rice!
