Dough
5 ½ cup flour – Best if use Gold Medal Flour
Sprinkle Salt Over Top a few times
Mix with chopsticks
Pour in HOT water until thickens
Mix and let sit for 1 hour
Meat
1lb fresh ground pork
½ small white onion (chop up small)
4-5 stalks green onion (chop up small)
¼ - ½ Ginger Clove (chop up small)
Salt and Pepper sprinkled
Pour in a few splashes of soy sauce
Mix
- Fry a small bit to taste

Making Perogies
Make sure dough is smooth, may need to add extra flour. Knead and add flour until not sticky.
Cut dough into four pieces.
Roll out a section of dough into a snake like shape.
Cut into 1-1 ½ inch pieces and roll into balls.
Flatten with a rolling pin, add extra flour to prevent sticking.
Scoop small spoon amount of meat into center, fold in half, and press down the edges .
- If the edges do not pinch closed, add a bit of water to completely seal.
Cooking
Boil until they float AND/OR fry until brown, use any kind of oil for frying.
