2½ cups distilled white vinegar
2 cups sugar
2 cups water
1 Tbsp. sea salt
2 tsp. whole yellow mustard seed
¼ tsp. celery seed
¼ tsp. ground turmeric
8 cups sliced pickling cucumbers, ⅛ - ¼ thick (2 - 2½ lbs. whole)
½ medium sweet onion, thinly sliced

Combine the vinegar, sugar, water, and salt in a medium saucepan over medium heat. Continuously stir just until the sugar dissolves, about 5 minutes, then remove from heat. Whisk in the mustard seed, celery seed, and turmeric. Allow the mixture to cool completely, about 1 hour. Place the cucumbers and onion in a large nonreactive bowl, pour the cooled brine over them, and push them down to submerge them. Cover and refrigerate overnight before eating or freezing. To freeze: Portion the pickles into freezer containers, making sure each container has an equal amount of cucumber, onion, and brine, then freeze. Because of the brine, pickles pack best in rigid containers.

** These really freeze well. Taste the same fresh or frozen. Honestly!
