1 lb sweet potatoes
1 lb apples
1/2 c apple cider
1/2 c cranberries
1/8 tsp salt

(1/3 c pure maple syrup may be added if you like your vegetables sweeter)

Directions:
Directions:
Peel sweet potatoes and slice thinly. Place in pot with enough water to cover. Bring to boil, cover and simmer 10 minutes. Drain. Peel and slice apples; cook apples and cranberries in cider about 5 minutes. Combine all; add salt and maple syrup to taste. Place mixture in an oven-safe dish, cover and bake 30 minutes at 350º.
